I propose to cook at home a delicious, spicy carrot salad with mint. I advise you to make this dish for a healthy snack. Ready leave the salad overnight (preferably a few days) in the fridge.

- Wash the parsley, onion and mint and chop it very finely.
- In a wide bowl, make a marinade: mix mint, onion, parsley, lemon juice, salt and mustard.
- Peel the carrots and rub on a coarse grater. Can also cut into very thin long straws.
- Mix marinade with carrot, add olive butter.
- Cover the bowl with foil and send to the refrigerator half an hour.
- We try, add oil and lemon juice to taste.
- Leave in the refrigerator for 8-9 hours, or you can even steam days, the carrot should be thoroughly saturated with dressing.
- Sprinkle with black pepper before serving.
