  1. Wash the parsley, onion and mint and chop it very finely.
  2. In a wide bowl, make a marinade: mix mint, onion, parsley, lemon juice, salt and mustard.
  3. Peel the carrots and rub on a coarse grater. Can also cut into very thin long straws.
  4. Mix marinade with carrot, add olive butter.
  5. Cover the bowl with foil and send to the refrigerator half an hour.
  6. We try, add oil and lemon juice to taste.
