Peel 450 gr. yellow or red beets, then chop straws. Mix with 1.5 tsp. salts; leave for 15 minutes to beets gave juice. Rinse, strain and dry; shift to a glass bowl. In a small saucepan, mix 1 tbsp. apple vinegar, 1 tbsp. water, 1/2 tbsp. sugar, 1 half chili perano (possible with seeds), 4 strips of grapefruit zest, 1.5 tsp. pepper peas and 1/4 tsp salt, bring to a boil. Pour the marinade onto beets. Let cool, then cover and refrigerate for as at least 1 day and up to 10 days.
