  1. Cut eggplant in circles about 8 mm thick.
  2. Salt and put in a colander to drain for an hour.
  3. Fry eggplant in parts on both sides.
  4. In a blender, chop the garlic and herbs.
  5. We make a marinade from water, salt and vinegar.
  6. We spread eggplant and greens in layers in a container.
  7. Pour the marinade, close the lid and put it in the refrigerator. Ideally, wait 2 days for the eggplant to marinate.
