Pepperoni meatballs

Recipes use volumetric containers volume: 1 cup (st.) – 240 ml. 3/4 cup (st.) – 180 ml. 1/2 cups (st.) – 120 ml. 1/3 cup (st.) – 80 ml. 1/4 cup (Art.) – 60 ml. 1 tablespoon (tbsp.) – 15 ml. 1 teaspoon (tsp) – 5 ml.

Ingredients for the recipe:

  • 280 gr beef pulp (chop), cut into pieces
  • 280 gr beef or calf pulp (subscapular part), cut into pieces
  • 230 gr. beef brisket, cut into pieces
  • 120 gr. pork fat, cut into pieces
  • 7 slices of white bread, cut into pieces
  • 6 cloves of garlic
  • Olive oil
  • 2 tbsp. l Calabrian ground pepper
  • 1.5 tsp Calabrian Chili Paste
  • 3.5 tsp fennel seed
  • 1 tsp anise seed
  • 3 tsp dried oregano
  • 1/4 Art. dry red wine
  • 3/4 Art. ricotta cheese
  • 3 large eggs, beat lightly
  • 1 (800 gr.) Can of canned cherry tomatoes, knead
  • 1 bunch of basil, separate the leaves and chop
  • Salt
  • Grated grana padano cheese for sprinkling

Recipe preparation:

  1. Preheat the oven to 210 C. Grease a baking sheet with olive oil, set aside. Mix meat and bacon in a large bowl. Add bread, garlic, 1.5 tbsp. l salt, ground pepper, chili paste, seeds fennel and anise, oregano and mix. Skip the resulting mixture through a meat grinder. Add minced wine, ricotta cheese, eggs and mix. (The mixture should be moist and sticky.)
  2. Divide the minced meat into 25 parts and form medium balls size. Put meatballs on a baking sheet and bake 15 – 20 minutes. Remove the meatballs from the oven and reduce the temperature to 150 WITH.
  3. Put the meatballs in a baking dish. Put on top mashed tomatoes and pour the marinade, cover with foil and bake, until ready, about 1 – 1.5 hours. Sprinkle with basil.
  4. Divide the hot pepperoni meatballs into portions and pour the sauce. Sprinkle cheese with grana padano on top. Serve with homemade with bread.
