Ingredients for the recipe:

  • 340 gr whole grain flour penne pasta or other short multigrain flour pasta
  • 2 tbsp. l extra virgin olive oil
  • 2 tbsp. peeled and diced butternut squash (approximately 225 gr.)
  • Coarse salt
  • 4 minced cloves of garlic
  • Freshly ground pepper
  • 1/4 – 1/2 tsp dried pepper flakes
  • 1 tbsp. finely grated Parmesan cheese (approx. 55 g.)
  • 3 tbsp. l fresh oregano
  • 1 medium shallot or 1/2 small red onion, pre shredded
  • 340 gr cremini mushrooms (champignons with undisclosed hats), peeled and sliced

Recipe preparation:

  1. Pour water into a large pot, salt and bring to boiling. Pour pasta into the water and cook according to instructions on the packaging. Pour 1 tbsp. the water in which it was cooked pasta, drain the rest of the water.
  2. Meanwhile, heat in a large non-stick pan over moderately high heat 1 tbsp. l olive oil. Add the pumpkin 1/4 tsp salt and a pinch of black pepper. Cook approximately 5 minutes, stirring occasionally, until the pumpkin is soft and golden. Put the pumpkin on a plate and set it aside.
  3. Add the remaining 1 tbsp to the pan. l olive oil mushrooms, 1/4 tsp salt and a pinch of black pepper. Saute in for 5 minutes until golden brown. Add garlic, shallots and pepper flakes. Cook for 2 minutes until the onions are soft.
  4. Add pasta, pumpkin and 1/2 tbsp. To the pan. abandoned water. Cook, stirring 1-2 minutes, until the mixture warms up. Add 1/2 tbsp.
