Difficulty: easy Servings: 8 In the recipes volumetric containers are used in volume: 1 cup (tbsp.) – 240 ml. 3/4 cups (st.) – 180 ml. 1/2 cup (tbsp.) – 120 ml. 1/3 cup (Art.) – 80 ml. 1/4 cup (st.) – 60 ml. 1 tablespoon (tbsp) – 15 ml. 1 teaspoon (tsp) – 5 ml.

Ingredients for the recipe:

  • 1 1/3 Art. dried porcini mushrooms
  • 120 gr. pancetta or bacon, cut into slices
  • 1 medium onion, cut into four parts
  • 1 carrot, cut into four parts
  • 1 stalk of celery, cut into four parts
  • 1 tbsp. l fresh thyme leaves
  • 8 fresh sage leaves
  • 6 duck legs (approximately 1300 gr.), Cut off excess skin and fat (leave fat for use in other dishes)
  • Coarse salt
  • 2 tbsp. l olive oil
  • 3 tbsp. l tomato paste
  • 2 bay leaves
  • 1 tbsp. dry red wine
  • 650 – 750 gr. pizza pizza pasta (wide noodles with added buckwheat flour)
  • 3 – 4 tbsp. l chopped fresh parsley
  • 1/2 tbsp. grated parmesan cheese

Recipe preparation:

  1. Pour mushrooms 1 tbsp. hot water, and leave for 10 minutes. Mix in a food processor bacon, onions, carrots, celery, thyme and sage, grind the mixture into a paste.
  2. Dry the duck legs with a kitchen towel and sprinkle with salt. Heat olive oil in a large deep frying pan or pan with thick bottom. Place duck legs in a pan and fry until brown crust formation, approximately 7 min. with each side. Transfer to a dish and drain half the fat.
  3. Transfer the mushrooms to a chopping board and chop finely, leave liquid. Add vegetable paste to the same pan, salt and fry for 5 – 7 minutes. Make room in pan and add tomato paste; cook, stirring 1 – 2 min., then add bay leaves, mushrooms and mix.
  4. Pour wine into a pan and bring to a boil. Cook until until the mixture thickens, 2 – 3 min. Return the duck legs to pan, add 4 tbsp. water and the remaining mushroom liquid. Bring to a boil, then reduce the temperature to low, cover cover and simmer until the duck meat is soft, approximately 1 hour 20 minutes Transfer duck legs to a dish and cool completely. Remove fat from stew surface, bring to boil and continue to cook, until confessed in volume up to 3 tbsp., approximately 12 minutes Separate duck meat from bones, cut into slices and add to the stew. Leave the stew on cooker to heat up.
  5. Bring salt water to a boil in a saucepan. Add paste pizza and cook until half cooked, about 2 minutes. WITH Using a slotted spoon, shift the pasta into the stew and mix. To water olive oil and mix again. Remove from the stove, sprinkle parsley and parmesan.
