Parfait with fig compote for breakfast

Light and tasty parfait, which is prepared on the basis of Greek yogurt. This is a more useful alternative to traditional parfait on whipped cream. Prepare fig compote in advance and fruit and nut mixture, and then lay them in layers with Fresh berries and yogurt in a beautiful transparent glasses. Ingredients for the recipe:

Parfait

  • 0.5 tbsp. blueberries
  • 0.5 tbsp. blackberry
  • 0.5 tbsp. thinly chopped strawberries
  • 1 tbsp. + 2 tbsp. l fig compote, recipe see below
  • 3 tbsp. Greek yogurt with a fat content of 2%
  • 3/4 Art. fruit and nut mix, see recipe below

Fig compote

  • 3 tbsp. fresh black figs (about 0.5 kg.), large chopped
  • 0.5 tbsp. coconut sugar
  • 2 tbsp. l white wine vinegar
  • 1 tbsp. l orange zest
  • 0.5 tbsp. freshly squeezed orange juice (from about 2 oranges)
  • 1 tsp ground cinnamon
  • 1 tbsp. l honey

Fruit and nut mixture

  • 3 tbsp. walnuts (approximately 350 gr.)
  • 2 tbsp. cashew with sea salt (approximately 280 gr.)
  • 1 tbsp. coconut flakes
  • 0.5 tbsp. peeled pumpkin seeds (approximately 70 gr.)
  • 2 tbsp. l melted coconut oil
  • 0.5 tbsp. banana chips
  • 0.5 tbsp. goji berries
  • 0.5 tbsp. chopped dried pineapple
  • 1/4 Art. carob chips (carob)

Recipe preparation:

  1. Combine blueberries, blackberries and strawberries in a bowl. Put on 2 tbsp. l fig compote at the bottom of six glasses for parfait. From above lay out 1/4 tbsp. yogurt, then 1/4 tbsp. berry mixture. Add another layer of yogurt, and then cover 1 tbsp. l fig compote and 2 tbsp. l fruit and nut mix. At once serve.
  2. Fig Compote:

    In a medium-sized saucepan, mix figs, sugar, vinegar, orange zest and juice, cinnamon and 3/4 tsp. salt and on moderately bring to a boil over high heat. Start breaking the figs with a crush or a wooden spoon. Continue cooking until stewed fruit thickens to the consistency of the sauce, you must pass on it wooden spoon, and leave a mark on the surface, 5-6 minutes. Remove from heat and let cool for about 15 minutes.

  3. Stir in honey and salt. Store in an airtight container in refrigerator for up to 2 weeks.
  4. Fruit-nut mixture:

    Preheat the oven to 190 ° C. Mix the walnuts in a large bowl nuts, cashews, coconut flakes and pumpkin seeds; mix with coconut oil and salt. Spread the mixture evenly over nasty. Bake until flavor starts, about 10 minutes. Cool completely for 20 minutes.

  5. Stir in banana chips, goji berries and dried pineapple. Then add carob chips if you want to add some chocolate flavor. Serve immediately or store in airtight container at room temperature.
