Wash oyster mushrooms, cut into portions.

Put the mushrooms in a bowl with high sides to make them comfortable mix.

Add garlic, crushed on a fine grater, into the bowl, tablespoon a spoonful of vinegar, chopped herbs.

Stir all the ingredients and leave in the cold for 1 hour.

Fry the mushrooms in a pan, stirring occasionally. They will be ready for use in 20 minutes.
