  1. Grate duck carcass with salt and spices. Ossetian duck

  2. Melt the butter in a skillet and fry the carcass in it with four sides to form a golden crust.

  3. Put the bird in a cauldron and add a glass of water and a glass of wine, bay leaf, cloves and herbs.

  4. Simmer over low heat under a lid for 1 hour.

  5. Chop meat in portions before serving.
