I am a big fan of oriental cuisine and was just delighted with this simple and tasty oriental eggplant salad, which not at all difficult to cook at home. I recommend to make this warm cold salad.

- Prepare eggplant, wash and dry. Why clean.
- Cut the eggplant into strips, salt and squeeze the whole juice.
- We send a frying pan with oil to the stove, fry eggplant until tender.
- We clean the celery and cut into thin straws.
- Wash carrots, peel and cut into thin straws, either we’ll use a grater for Korean carrots.
- Chop the onion into thin feathers. Mix all the ingredients in a deep bowl.
- Heat the coriander in a skillet, pour 3 tablespoons olive oil and hot.
- Fill the salad with aromatic boiling oil. Add pepper vinegar, ginger juice and honey. Mix everything and salt to taste. Salad need to let it brew.
- Before serving, sprinkle the salad with chopped herbs.
