I am a big fan of oriental cuisine and was just delighted with this simple and tasty oriental eggplant salad, which not at all difficult to cook at home. I recommend to make this warm cold salad.

  1. Prepare eggplant, wash and dry. Why clean.
  2. Cut the eggplant into strips, salt and squeeze the whole juice.
  3. We send a frying pan with oil to the stove, fry eggplant until tender.
  4. We clean the celery and cut into thin straws.
  5. Wash carrots, peel and cut into thin straws, either we’ll use a grater for Korean carrots.
  6. Chop the onion into thin feathers. Mix all the ingredients in a deep bowl.
  7. Heat the coriander in a skillet, pour 3 tablespoons olive oil and hot.
  8. Fill the salad with aromatic boiling oil. Add pepper vinegar, ginger juice and honey. Mix everything and salt to taste. Salad need to let it brew.
  9. Before serving, sprinkle the salad with chopped herbs.
