Orecchiette pasta with wild garlic and beans

  • 450 gr spicy Italian raw sausages, peeled off shell
  • 1 tbsp. peeled garden fava beans
  • 3 tbsp. chopped wild garlic (wild garlic), bulbs and leaves (or the same amount of leek plus 1 clove of garlic)
  • 2 tbsp. l olive oil, plus a little spray
  • 2 tbsp. grated parmesan cheese

Recipe preparation:

  1. In a very large saucepan, boil 4.7 liters. water with 3 tbsp. л.salt. Pour pasta and cook until al dente, about for 1 min. less than indicated on the package. Periodically stir so the pasta does not stick together. Scoop and save 1 Art. water after boiling, drain the rest.
  2. In the meantime, put a large frying pan on a high heat. Add olive oil and minced meat and cook for 2-4 minutes., breaking meat into pieces as it cooks. Add garden Beans and wild garlic, salt and pepper. Cook for 2 minutes.
  3. Add the pasta and the leftover cooking water to the stewpan, cook for 30 seconds, stirring. Remove from heat and intervene Parmesan. Sprinkle with plenty of olive oil on top and sprinkle a pinch of ground pepper. Author’s note: To peel garden beans, peel, then blanch beans for 30 seconds boiling salted water. Drain, transfer to a bowl of ice water and squeeze the beans out of the shells. You can cook the dish from pasta and fava beans without adding sausages.
