Difficulty: Easy Servings: 4 The recipes use measuring containers with a volume of: 1 cup (st.) – 240 ml. 3/4 cup (st.) – 180 ml. 1/2 cup (st.) – 120 ml 1/3 cup (st.) – 80 ml. 1/4 cup (st.) – 60 ml. 1tablespoon (tbsp.) – 15 ml. 1 teaspoon (tsp) – 5 ml.
Ingredients for the recipe:
- 2 tbsp. peeled and diced pumpkin (about 230 g)
- Olive oil
- Coarse salt
- 1/2 bunch cabbage broccoli raab (slave), cut off the hard ends stems, cut the bunch into three parts
- 3/4 Art. pancetta’s dried brisket, diced in 1 cm.
- A pinch of red pepper flakes
- 2 tbsp. orecchietti pasta
- 1/2 tbsp. grated Parmesan cheese, plus extra for sprinkling
- 1/4 Art. peeled pumpkin seeds, fry

Recipe preparation:
- Preheat the oven to 190 C. Stir the pumpkin with the olive butter and salt and put in one layer on a baking sheet. Bake in oven until soft, about 20 min. Remove from the oven and leave cool.
- Boil well salted water in a large saucepan. Prepare a bowl of salted water and ice. Dip broccoli in pan with boiling water, mix and immediately transfer to ice water. Leave boiling water for pasta. Transfer broccoli from ice water in a colander and leave to drain excess water.
- Cover the bottom of the large pan with olive oil and add bacon and red pepper flakes. Saute the pancetta over medium heat until golden and crisp. Add baked pumpkin and about 3/4 cup of water in which the cabbage was boiled. Stew on low heat until the water evaporates halfway, about 2 min
- Meanwhile, cook the pasta in the left water until half-prepared, for approximately 1 min. less than indicated on packaging. Put the pasta in the pan to the pancetta with pumpkin. Add broccoli and about 1/2 cup of water from cooking pasta. Cook until the water evaporates and the sauce thickens, about 1 min Drizzle with olive oil and sprinkle with grated Parmesan. Stir the dish vigorously.
- Put the pasta in plates and sprinkle with pumpkin seeds and extra cheese.
