Ingredients for the recipe:
- 60 gr dried sausage chorizo, cut into cubes
- 1 medium red sweet pepper, chopped
- 1 jalapeno pepper, chop (for less sharpness remove seeds)
- 1 can (400 gr.) Canned pinto beans without content salt, drain and rinse under water
- 3 feathers of green onions, cut into rings
- 6 large eggs and 2 egg whites
- Coarse salt and freshly ground pepper
- 1 tbsp. crushed corn chips (preferably low salt content)
- 3/4 Art. coarsely grated low-calorie cheddar cheese (approximately 90 gr.)
- 2 tbsp. l chopped fresh cilantro
- 1 avocado, remove the stone, remove the pulp and chop sliced
- 2 tbsp. l low calorie sour cream

Recipe preparation:
- Fry the sausage in a non-stick pan. medium temperature for 3 minutes, until the sausage starts to fry. Add bell peppers and jalapenos, fry, stirring occasionally, another 5 minutes. Add beans, half green onions and continue cooking, occasionally stirring until the beans not fully warmed up, approximately 4 minutes
- Mix all the eggs in a bowl, 1/4 tbsp. water and 1/8 tsp. salt and pepper, beat until smooth; add to pan with beans and fry, stirring with a spatula, until the mixture will begin to harden, approximately 2 minutes Add chips, cheese, half cilantro and the remaining green onions; keep cooking stirring until the egg mixture has completely hardened, yet about 3 minutes
- Put the omelet on plates, lay the slices of avocado next to it, put one spoon of sour cream on top and sprinkle the remaining cilantro.
