Ingredients for the recipe:

  • 1 tbsp. butter, room temperature
  • 1 tbsp. brown sugar
  • 3/4 Art. molasses
  • 2 large eggs at room temperature
  • 2 tbsp. l lemon juice
  • 2 tbsp. l finely grated fresh ginger
  • 2 and 1/4 Art. premium flour
  • 0.5 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 0.5 tsp ground nutmeg
  • 0.5 tsp ground allspice
  • 0.5 tsp salt
  • 0.5 tbsp. boiling water
  • 0.5 tsp soda
  • 2 tbsp. l finely chopped ginger candied fruits
  • Powdered sugar
  • Sweetened whipped cream for serving

Recipe preparation:

  1. Preheat the oven to 175 ° C. Oil cake mold size 22×32 cm.
  2. Beat butter and brown sugar until light and lush masses. Stir in molasses, then add one egg at a time, well whipping after each addition. Add lemon juice and ginger.
  3. Sift the flour with spices and salt into a separate bowl. Add this mixture to butter and mix. Mix boiling water and baking soda and quickly pour into the dough, stirring quickly, and then mix ginger candied fruit (the dough will be liquid).
  4. Pour the dough into the prepared pan and bake for 45 minutes until the tester inserted in the center of the cake comes out clean. Cool the pie completely and cut into squares. Serve heated, sprinkled with powdered sugar, with a spoon whipped cream. The pie can be stored tightly wrapped for 3 days.
