Ingredients for the recipe:

  • 4 natural turkey cutlets (approximately 560 gr.)
  • 1 tbsp. finished frozen bean black eye pre thawed
  • 1 tbsp. Israeli couscous “Ptim” or small pasta
  • 3/4 Art. cherry tomato cut in half
  • Grains 1 corn cob (or 3/4 tbsp. Frozen corn)
  • 3/4 tsp chili powder or cajun seasoning
  • 1 lime juice
  • 3 tbsp. l extra virgin olive oil
  • 1 stalk of celery, finely chopped
  • 2 feathers of green onion, finely chopped
  • 2 tbsp. l chopped parsley or basil
  • Coarse salt and freshly ground pepper

Recipe preparation:

  1. In a medium bowl, mix chili powder and lime juice. Roll in This mixture of turkey meat and leave to marinate for 10 minutes.
  2. In a medium saucepan, bring the water to a boil. Add couscous and cook until cooked for 8-10 minutes. Drain the water.
  3. Meanwhile, in a large non-stick frying pan in moderately over high heat, heat 1 tbsp. l olive oil. Add corn, beans, celery and cook for about 3 minutes, until vegetables will not begin to soften. Add tomatoes, chives, parsley, 1/2 tsp salt and black pepper to taste. Warm the mixture 2 minutes and transfer to a large bowl. Add couscous to the bowl together with 1 tbsp. l olive oil, salt and pepper to taste and mix.
  4. Wipe the pan. Add the remaining 1 tbsp. l olive oil and heat it over moderate heat. Place cutlets from turkey and fry until golden brown for 3 minutes each side. Salt and pepper. Serve with couscous.
