I offer you a basic recipe for delicious risotto, based on which you you can cook risotto with anything: vegetables, mushrooms, seafood and so on. I took the royal mushrooms (they portobello), but you can take almost any mushrooms. Highly it is important to buy the right rice! Carnaroli and vialone nano will be perfect option. - Finely chop the mushrooms. I left a few pieces of plates for decoration.

- When the rice is almost ready, add the mushrooms, 2 good pieces oils, grated parmesan. Mix and finish just a couple of minutes until ready. You should have rice that is tight inside starchy and sticky on the outside, not boiled porridge! Tried to show the texture on the video: you swipe the bottom with a spatula and leave a dry mark, and the rice lies in a wave. It’s perfect consistency. Arrange on plates and immediately serve.
