Mozzarella at home

Traditional Italian mozzarella made from milk. buffalo, but there are variations of this cow cheese, and goat milk. Cheese is added to many different dishes: pizza, pasta, salads. Recipe:

  • 700 gr. cheese mass

Rub the cheese mass through a chinua strainer or through a slotted spoon several times, breaking the mass into small particles. Put the mashed cheese into a pot of warm water so that so that water covers the mass. Mash the mass with your hands. Drain 75 percent of water. Use a spatula or a wooden spoon to compress cheese mass. Gently stretch the mozzarella. Pour boiling water. Mash and stretch the cheese again. Drain 75 percent of the water and add the same amount of boiling water. Repeat the process and roll the mozzarella into ball with a smooth surface, bending the edges down.
