Ingredients for the recipe:

  • 3 tbsp. (about 340 gr.) chopped fried chicken breast without skin
  • 1 tbsp. couscous
  • 2 tbsp. l olive oil
  • 2 small red onions, cut into thin slices
  • 3 carrots, cut across in half and lengthwise into four parts
  • 2 tsp Ras al Hanut (Moroccan spices) or spices for pumpkin pie
  • 1 ginger slice 2.5 cm., Peel and finely slice
  • 2 tbsp. fresh cilantro (about 1 large bunch)
  • 1/3 Art. raisins
  • 1 tbsp. l honey
  • 2 tbsp. l toasted chopped almonds

Dry spice mix ras al-khanut:

  • 1 cinnamon stick
  • 2 pieces of galangal
  • 1 tbsp. l ground ginger
  • 8 peas of allspice
  • 8 seeds of white or green cardamom
  • 1 tsp anise
  • 1 tsp freshly grated nutmeg
  • 1 tsp lavender
  • 2 small pieces of violet root
  • 5 dry rosebuds
  • 4 whole clove buds
  • 6 turmeric fruits
  • 1/2 tsp ground cayenne pepper
  • Pinch of matsis
  • Grind all the ingredients

Recipe preparation:

  1. On moderate heat, heat 1 tbsp. l olive oil in a cauldron or medium-sized saucepan. Add red onions and carrots, cook for about 4 minutes, until the onion is slightly soft. Pour in a mixture of ras al-khanut, ginger and 1/2 tsp. salt. Shuffle while covering vegetables with spices. Add 3 tbsp. water and bring to weak boiling. Cover, cook until soft carrots about 8 мин.
  2. In the meantime, cook the couscous following the instructions on packaging. In a food processor, mix 1.75 tbsp. cilantro, 2 tbsp. l water and the remaining 1 tbsp. l olive oil to a smoothie consistency. Beat the couscous with a fork and stir in the cilantro mixture. Cover lid to keep warm.
  3. Remove the lid from the vegetables, stir in the chicken and raisins. Keep going cook over medium heat until the raisins swell, about 5 minutes. Stir in honey and the remaining 1/4 tbsp. cilantro. Serve the chicken with vegetables, laid out on couscous and sprinkled with almonds.
