Ingredients for the recipe:

Meatballs

  • 3 tbsp. l olive oil
  • 1/2 tbsp. diced onions
  • 1 clove of garlic, chop finely
  • 1/2 tsp ground coriander
  • 1 tsp fennel seed, grind
  • 1 tbsp. l chopped fresh rosemary
  • 60 gr soft goat cheese (1/4 tbsp.)
  • 600 – 700 gr. minced meat
  • 1/2 tbsp. breadcrumbs
  • 2 large eggs
  • Coarse salt

Sauce

  • 1/4 Art. olive oil
  • 1 medium onion, cut into cubes
  • 800 gr. pickled cherry tomatoes with marinade, knead hands with tomatoes
  • 1/4 tsp dried pepper flakes
  • Coarse salt
  • 1/2 tsp Sahara
  • 1/2 tsp dried oregano

Mini Cheeseburgers

  • 220 gr. soft goat cheese (1 tbsp.)
  • 2.5 tbsp. l mascarpone cheese
  • 1.5 tbsp. l cow’s milk
  • 1/8 tsp dried oregano
  • 1/4 tsp chopped fresh rosemary
  • 1/4 tsp chopped fresh thyme
  • 1/4 tsp chopped fresh dill
  • Coarse salt and freshly ground pepper
  • 24 small hamburger buns
  • Pickled sliced cucumbers for serving

Recipe preparation:

  1. Cook the meatballs: heat the olive in a pan butter. Add onion and fry until soft, 3 min. Add garlic and cook, stirring constantly, for another 1 min.
  2. Add coriander, fennel seeds and rosemary to the pan; fry for 1 min. Transfer the mixture to a large bowl and cool to room temperature.
  3. Meanwhile, roll from goat cheese balls with a diameter of 12 – 15 mm
  4. Add minced meat, breadcrumbs, eggs and 1/2 tsp salt, mix. Form from minced meat 24 small flat cakes (approximately 2 tbsp. minced meat). Make in each a small depression and place in the center 1 ball of goat cheese. Press the minced meat to the cheese and roll into balls.
  5. Prepare the sauce: heat in a pan with a thick bottom olive oil. Add onions and cook for 1 min. Add tomatoes with marinade, pepper flakes, 1/2 tsp salt and sugar. Cook the sauce until thickened, about 10 min Add oregano.
  6. Place the meatballs in the saucepan. Reduce temperature to low, and simmer with the lid on until cooked, about 10 minutes
  7. Collect cheeseburgers: mix goat cheese in a bowl, mascarpone and milk until smooth. Stir in oregano rosemary, thyme, dill, 1/4 teaspoon salt and a pinch of pepper. To spread lower halves of buns with cheese mixture, put marinated on top cucumbers, meatballs and pour over the remaining sauce. Cover cheeseburgers upper halves of buns.
