Recipe preparation:
- In a large saucepan over moderate heat, heat the olive butter. Add the onions and fry until transparent, about 4 minutes. Add garlic and fry for another 30 seconds. Add celery and carrots and cook until they begin to soften, about 5 minutes. Stir in green beans, dried oregano and basil, 3/4 tsp. salt pepper to taste; cook another 3 minutes.
- Add diced and mashed tomatoes to the pan, chicken stock and bring to a boil. Turn down the heat to moderately weak and simmer for 10 minutes. Stir in beans and pasta and cook, until pasta and vegetables are soft, about 10 minutes. Salt taste. Pour the soup into plates, sprinkle with parmesan and chopped basil.
