- 8 pork chops 6 mm thick. each (total weight 550 – 650 gr.), cut off excess fat
- Coarse salt and freshly ground pepper
- 6 thick slices of white bread
- 3 tbsp. l grated parmesan cheese
- 2 tbsp. l fresh chopped parsley
- 1/2 tsp fresh chopped rosemary
- 3 large eggs
- 1.5 tbsp. flour
- 1 tbsp. l olive oil, as well as more for frying
- 5 tbsp. young arugula
- 1 tbsp. cherry tomatoes, cut each in half
- Lemon, for serving, cut into slices

Recipe preparation:
- Sprinkle pork chops on both sides with salt and pepper. Grind bread in a food processor until large crumbs are formed (should get about 3 tbsp.). Pour bread crumbs into shallow baking dish, add cheese, parsley and rosemary, mix. Beat the eggs in a bowl. Pour flour into a separate bowl. Roll the chops in flour, dip in beaten eggs, then roll in bread mixture, slightly pressing them to the surface.
- Pour 6 mm into the pan. olive oil, heat to medium temperature. Fry pork chops, spread in a pan over a few pieces, 2 to 4 minutes. on each side, until golden colors. Transfer chops onto a paper-lined dish with a towel.
- Stir in a bowl arugula and tomatoes, add 1 tbsp. l olive oil, salt and pepper. Serve pork chops with arugula salad and lemon slices.
