Ingredients for the recipe:

  • 1/2 small red onion heads, cut thin half rings
  • 280 gr couscous (1.5 tbsp.)
  • 2 tbsp. frozen edamame soybeans, unfreeze and clear
  • 1.5 tbsp. cherry tomatoes, cut each in half
  • 1/4 Art. chopped fresh parsley
  • 3 tbsp. l olive oil
  • Juice 1 Lemon
  • Coarse salt and freshly ground pepper
  • 1 tbsp. hummus with the taste of fried red pepper (chickpea puree with tahini sesame paste, garlic, lemon juice, with the addition of fried pepper) Homemade hummus recipe
  • 8 pcs ready frozen or canned dolma
  • 1/4 Art. canned peppaduy peppers, cut in half
  • 2 pits of whole grains or thin pita bread, cut into pieces and fry in a pan

Recipe preparation:

  1. Pour red onion with cold water and ice and leave time to cook couscous and edamame beans.
  2. Cook couscous, as indicated in the instructions for packaging.
  3. Boil the beans in salted water, recline in a colander and rinse under cold water. Mix edamame beans in a large bowl, tomatoes, parsley, olive oil, lemon juice, 1/2 tsp salt and 1/4 tsp pepper.
  4. Loosen couscous with a fork. Get the red onion out of the water and a little wring out. Add couscous and red onion to the bowl with beans and mix. Arrange Greek meze on plates and serve with hummus, dolma, pickled peppers and bread.
