Mexican Cheese and Chicken Pasta

Difficulty: easy Servings: 4 In the recipes volumetric containers are used in volume: 1 cup (tbsp.) – 240 ml. 3/4 cups (st.) – 180 ml. 1/2 cup (tbsp.) – 120 ml. 1/3 cup (Art.) – 80 ml. 1/4 cup (st.) – 60 ml. 1 tablespoon (tbsp) – 15 ml. 1 teaspoon (tsp) – 5 ml.

Ingredients for the recipe:

  • 340 gr horns pasta
  • 2 tbsp. chopped grilled chicken breasts (without skin)
  • 2 tbsp. grated cheese mixture from different varieties of cheese (approximately 225 gr.)
  • 1 tsp salt
  • 1 and 1/4 Art. 2% milk
  • 3 tbsp. l (45 gr.) Unsalted butter
  • 1 bunch of green onions, cut and cook only white parts
  • 2 tsp chili powder
  • Freshly ground pepper
  • 340 gr pico de gallo sauce (spicy mexican vegetable sauce with onions) or salsa sauce (about 1 tbsp.)
  • 1/4 Art. flour
  • 3 tbsp. unsalted chicken stock

Recipe preparation:

  1. Pour water into a large pot and boil. Add the pasta and cook as indicated on the packaging. Drain, rinse pasta cold water and put back into the pan. Add 1/4 tbsp. milk and mix. Put cheese and chicken on top (not mix).
  2. Meanwhile, in a large skillet over medium heat, melt 1 Art. l (15 gr.) Butter. Add the white parts of the onion, chili powder, salt and season with ground pepper. Cook for 2 minutes stirring. Add half the pico de gallo sauce. Cook 2-3 minutes, stirring constantly, until the onion is soft.
  3. Reduce the fire to medium. Add the remaining 2 tbsp. l (thirty gr.) butter and melt it, stirring constantly. Add the flour gradually, cook for about 1 minute until formed pasty mass. Do not forget to constantly interfere. Gradually pour in the broth and the remaining 1 tbsp. milk. Do not stop interfering. Bring the sauce to a boil, stirring occasionally, and cook 6 minutes until the mixture thickens.
  4. Add the sauce to the pasta pan. Cook, stirring, on medium heat for 3 minutes until the cheese melts. Salt and pepper. Top with the remaining half of pico de gallo sauce. another pasta recipe with cheese and bacon.
