Ingredients for the recipe:

Sauce

  • 2 tbsp. l olive oil
  • 1/2 small onion, finely chopped
  • 1 stalk of celery, finely chopped
  • 1/2 medium carrot chopped finely
  • Coarse salt
  • 800 gr. pickled cherry tomatoes with marinade, knead hands with tomatoes
  • 1 bay leaf
  • 2 sheets of fresh basil

Meatballs

  • 120 gr. potato peeled
  • 450 gr minced meat
  • 1/3 Art. grated Parmesan cheese, and also for sprinkling
  • 2 tbsp. l milk
  • 1.5 tsp chopped garlic
  • 1 tsp chopped fresh thyme
  • 1/4 Art. olive oil
  • Coarse salt and freshly ground pepper
  • 4 – 6 mini baguettes, cut along one side

Recipe preparation:

  1. Prepare the sauce: heat olive oil in a saucepan. Add onions, celery, carrots and a pinch of salt. Fry occasionally stirring until vegetables are soft, approximately 8 minutes Add tomatoes with marinade, bay leaf, basil and 1/2 tbsp. water. Bring to a boil and cook over low heat, stirring occasionally, until the sauce thickens, 30 – 40 minutes. To salt.

  3. Mix minced meat, potatoes, parmesan, milk, garlic in a bowl, thyme, 1 tbsp. l olive oil, 1/4 tsp pepper and 1 tsp. salt. Form small meatballs with a diameter of 2.5 cm from minced meat.
  4. Heat the remaining 3 tbsp in a pan l olive oil. Place the meatballs in a hot pan and fry on all sides within 8 minutes Add the sauce and continue cooking meatballs another 5 minutes
