Ingredients for the recipe:
- 220 gr minced beef shoulder
- 1/4 Art. grated parmesan, and a little more for sprinkling
- 4 tbsp. young spinach (85 gr.)
- 254 gr. frozen tortellini with cheese
- 1/4 Art. chopped parsley
- 1 lightly beaten egg
- 1 clove of garlic, grated
- Coarse salt and freshly ground pepper
- 2 tbsp. l extra virgin olive oil
- 2 carrots, diced
- 2 stalks of celery, diced
- 950 ml. lightly salted chicken stock

Recipe preparation:
- In a medium bowl, mix the minced meat, parmesan, 2 tbsp. l parsley egg, garlic, 1/2 tsp salt and pepper to taste. Stir minced meat hands. Form 2.5 cm meatballs, set aside side.
- In a broiler or pan over medium-high heat, preheat olive oil. Put the meatballs and cook, turning, 3-4 minutes until golden brown. Put the meatballs on a plate. Add carrots and celery to the pan, cook, stirring, 5 minutes until the vegetables are soft. Add the broth and 3 tbsp. water, bring to a boil. Put the meatballs back in the pan with the remaining 2 tbsp. l parsley and 1/2 tsp salt. Bring to a boil and cook 2 minutes until meatballs are ready.
- Add tortellini and cook another 4 minutes until they are will pop up. Add spinach and cook, stirring, 1 minute, until leaves are not attached. Salt and pepper. Sprinkle soup with Meatballs Parmesan.
