  1. We wash the meat. Boil the meat for about an hour (take out the breast 15 minutes after boiling). Do not salt at this stage: soup quite salty from pickle and cucumbers, so add salt when Necessity is better at the very end.
  2. Cooking: fry onion, carrots, tomato and cucumbers. Put vegetables in the stewpan (pour the cucumbers together with brine!), add the zest of lemon. We put on a slow fire simmer for 20 minutes. If necessary, add several tablespoons of broth.
  3. We get the finished meat. We filter the broth.
  4. Cut all the meat into strips
  5. Add the frying and all the meat to the strained broth. Add up if necessary. Bring to a boil.
  6. After boiling, boil for 2 minutes, remove from heat. Add olives, cover, let it brew for 10 minutes.
  7. Serve with a slice of lemon, sour cream and herbs. The soup tastes better on the second day when it is well infused.
