Recipe preparation:
- Cook the bacon in a large roasting pan or frying pan on medium high heat, stirring occasionally until it becomes crispy, about 5 minutes. Remove with a slotted spoon and dry on paper towels.
- Put potatoes and leeks in the same pan and cook, stirring until the onion softens slightly. Add the garlic, rosemary and thyme, 0.25 teaspoon salt and a pinch of pepper. Cook, stirring until vegetables are lightly browned, about 2 minutes. Add chicken stock and 4 tbsp. water and bring to a boil; cover and cook for 15 minutes.
