In salted water, cook to a softness of 700 g. peeled and diced potatoes with 1 sprig of rosemary and 2 crushed cloves of garlic for 15 minutes; drain, remove rosemary. Mash the potatoes by adding 0.5 Art. skim milk, 2 tbsp. l olive oil and as much chopped parsley, salt and pepper. Move to the form for baking; sprinkle with grated parmesan.
