Lush pancakes with blueberry and peach yogurt sauce

Ingredients for the recipe:

  • 180 ml. sugar-free pineapple juice
  • 1 tbsp. frozen forest blueberries
  • 1 large peach, peeled, pitted and chopped cubes, or 1 tbsp. frozen peaches, thawed and diced
  • 2 tbsp. Greek yogurt with a fat content of 2%
  • 4 large eggs
  • 2 tbsp. l brown sugar
  • 1 tsp finely grated lemon zest
  • 0.5 tbsp. premium flour
  • 1.5 tsp soda

Recipe preparation:

  1. In a small saucepan, bring the pineapple juice to a boil with blueberries. Cook until the blueberries burst and the juice thickens, about 15 minutes. Stir in the peaches and cook for another 5 minutes. Take off fire.
  2. Meanwhile, in a large bowl, beat the yogurt, eggs, sugar and zest. In a small bowl, combine flour, soda and 0.5 tsp. salt and mix in the yogurt mixture.
  3. Heat a large non-stick pan over medium heat. coated and sprinkle with cooking spray. Fry in batches pancakes, pouring into the pan about 1/4 tbsp. at once evenly distributing pancakes in a pan.
  4. Fry until the pancakes bubble up and lightly dry, 2-3 minutes, then gently turn over and fry until golden crust and readiness, another 2-3 minutes. Repeat the same the same with the remaining dough, spraying the pan with a cooking spray. Serve the pancakes hot with blueberry and peach sauce.
