Ingredients for the recipe:
- 250 gr skinless chicken breasts and boneless cut
- 1 tbsp. red lentils, washed
- 1 bunch of green onions (only white and light green parts), sliced
- 1 jalapeno pepper, seedless, finely chopped
- 2 slices of peeled ginger, less than 1 cm thick.
- 1/2 tbsp. cilantro, a little more for decoration
- 4 cloves of garlic
- 3 baked apples, peeled and chopped
- 2 tsp seasoning curry
- 400 gr. coconut milk
- 4 tbsp. chicken broth

Recipe preparation:
- Grind onions, jalapenos, ginger, cilantro and garlic in a combine. Add apples while the combine is working. Put in a cauldron or a large saucepan of curry powder and fry, stirring lightly, on average temperature about 1 min. Add coconut milk and stir until smooth; cook for about 5 minutes, until half evaporated. Add a mix of apples and onions and 1/2 tsp salt. Cook, stirring, until thickened about 5 min
- Add chicken stock and lentils. Bring to a boil, then reduce heat to medium and cook until lentils will become soft and boiled, about 15 minutes Add chicken and stew until ready for about 6 minutes. Season with salt and pepper before serving garnish with cilantro.
