- 1 chop onion finely and fry on vegetable oil.
- Cut eggplant into cubes. Add to the pan with onions and fry for 3 minutes. Add a little water, close the lid, simmer 5 more minutes.
- Cut bell pepper and tomatoes, add to the pan. Stew for another 15 minutes. Add finely chopped garlic. Mix. After 1-2 minutes remove from heat.
- Finely chop the second onion and fry in another pan in vegetable oil.
- Add flour to the onion and fry over low heat. Stir, so that there are no lumps.
- Pour 300 ml of water. Put salt, pepper and bay leaf. Add chopped basil. Cook over low heat 10 minutes, not forgetting to constantly stir.
- Grease a baking dish with oil. Lay out layers: lasagna, sauce, eggplant. Lasagna again, eggplant sauce. Third grease a layer of lasagna with sauce.
- Preheat the oven to 180 degrees. Bake with lasagna 30-40 minutes.
