  1. Boil 1 kg of potatoes while hot, mash in mashed potatoes.
  2. Add to the cooled mashed potato: 200 g of cottage cheese (if large, walk with a blender or wipe through a sieve), 250 gr grated cheese, 2 eggs, thyme and smoked paprika to taste.
  3. If the cheese is not salty, salt to taste.
  4. Mix the ingredients well and pour in about 500 g sifted flour, knead a soft sticky dough.
  5. Divide the dough into 15-17 pieces, roll each ball thinly with flour. Do not spare the flour during rolling.
  6. We fry each hitchin in a dry preheated pan for 2 minutes with each side.
  7. Grease the finished hitch with butter.
  8. While the huts are fried, cover them with a bowl or lid, so they will be even softer.
