  1. Finely chop the onion, beat the meat well and cut into thin long layers. Ribs are cut into pieces of six cm. Cut the fat tail into pieces of five to seven cm.
  2. We mix meat with onions, salt and spices. Add water and pickle for three to four hours.
  3. We spread the meat in the following order: first ribs, then meat, then kurdyuk, repeat all over again.
  4. Gently string three skewers at once.
  5. We fry on the grill.
  6. To serve, make a snack: cut the onion into thin rings, season with paprika, salt and vinegar, pickle onions for about fifteen minutes.
  7. We cook barbecue for about seven minutes. Gently cut the meat between skewers.
