Add lamb shanks to salt, pepper, roll in flour and fry in olive oil to a crust. Put in a baking dish.

In the same oil, fry the onions with a medium cube, garlic, anchovy and tomato paste. Add to lamb.

Pour lamb with 1 liter of chicken stock, bake under the lid 1,5 hours at 160 C.

Add quince, sliced, and dried fruit, bake another 40 minutes.

Steam couscous with broth in a 1: 2 ratio, close the lid with 5 minutes. Loosen with butter. Add finely chopped peppermint, lemon juice, salt and pepper.
