  1. Add lamb shanks to salt, pepper, roll in flour and fry in olive oil to a crust. Put in a baking dish.

  3. Pour lamb with 1 liter of chicken stock, bake under the lid 1,5 hours at 160 C.

  4. Add quince, sliced, and dried fruit, bake another 40 minutes.

  5. Add spices and herbs, bake for 20 minutes.

  6. Steam couscous with broth in a 1: 2 ratio, close the lid with 5 minutes. Loosen with butter. Add finely chopped peppermint, lemon juice, salt and pepper.

  7. Put a portion of couscous on a plate, top with shank, add quince, dried fruit, pour over the sauce.
