  1. Wash the liver, clear of the film, soak in milk. Remove on night in the fridge.
  2. Put water on fire, salt, boil, lay soaked liver. Bring to a boil, remove the foam. Cook 15 minutes.
  3. Remove from water, transfer to a bowl with a lid, cool.
  4. Salted and fresh cucumbers cut into strips.
  5. Boil frozen peas.
  6. Grate the liver on a coarse grater.
  7. Mix low fat yogurt with mustard.
  8. Gently mix the liver with peas in a volumetric bowl, cucumbers, herbs, yogurt dressing, mustard. Serve with lettuce.
