How to cook lagman

You can write a novel about spices for lagman. In the east this is easy with the bazaar: ask seasonings for the lagman – the mixture is ready! It includes pepper – 2 types: black and allspice, coriander, star anise, paprika, caraway seeds. There is even a special ingredient – jusai onion. You can replace the delicate garlic aroma of a rare spice with wild garlic or feathers of green garlic.

To cook lagman for you will need:

  • Meat – preferably lamb, but in the absence of pork, beef or even chicken – 700g.
  • Necessarily chicken fat – 1 tbsp.
  • Carrots – 2-3pcs.
  • Onion – 2pcs.
  • Bulgarian pepper – 2pcs.
  • Radish (or daikon) – 2pcs.
  • Vegetable oil – 100ml.
  • Garlic – 3 cloves.
  • Tomato paste – 3 dec.
  • Spices – if possible precisely for the lagman.
  • Pasta or spaghetti

You can prepare a lagman like this:

For cooking meat, it is better to use thick-walled dishes. Pour in vegetable oil and heat the cauldron as much as possible or a pan. Add fat and a slice of carrots.

This is done so that the burning of oil is concentrated exactly there. After the carrots have darkened, remove it and lay it out pieces of meat.

Fry the slices, add chopped onions, grated carrots, slices of bell pepper. After 10 minutes add the radish and garlic.

Rub the radish on a fine grater, chop the garlic. If under hand there is no radish, you can replace the root crop with cabbage.

Then put the tomato paste, spices, chopped herbs. Fill the mass with water so that everything is covered with liquid. Salt.

Bring the meat and vegetables to a boil and reduce the heat to a minimum. Stew the dish for at least an hour. The meat should be soft.

Boil pasta or spaghetti. Rinse if available need. Put on a dish. Top with meat and vegetable gravy.

Of course, it is advisable to learn how to cook the noodles for the lagman by yourself. But the lack of time makes us look for a similar product in stores. If you’re lucky, buy some special noodles.
