Offal recipe
Take the time to say that you don’t like chicken liver or use offal. Homely in appearance, they are very useful and contain many essential vitamins. Many in childhood told that chicken heart livers are good for hematopoietic functions. However, we will leave medical disputes and learn how to cook one of the most popular Georgian dishes where you can use any offal, combining them with a grant.
The main ingredients:
- chicken hearts and liver – 500 g each;
- red wine – 100 g;
- garlic – 2 cloves;
- onions – 1 pc;
- vegetable oil – 5 tablespoons;
- coriander – 1 teaspoon;
- walnuts – 3 tablespoons;
- cilantro – 1 bunch;
- vinegar – 1 tablespoon;
- pomegranate – 1 pc.;
- salt to taste.
Cooking method
My, we eliminate everything suspiciously from offal and a little dried with a paper towel. We cut everything into large pieces. If the hearts are small, then they can be left intact. Grind onions and garlic using a knife.
Take a pan with a thick bottom and a small amount vegetable oil and fry onions and garlic. Then add liver and hearts and keep on fire until golden crust appears. After that, you can reduce the heat and pour vinegar and wine into the pan. Mix, salt, season with coriander and do not remove from heat on for another 10 minutes.
In a blender we mix washed and slightly dried cilantro and walnuts. The mixture should be shallow. Therefore if nuts too large and the blender doesn’t take them, then they can be a little grind with a knife beforehand. Pour the nut-green mixture into pan with offal and mix well.
The dish should be served hot, not spreading on a plate and sprinkled with pomegranate seeds on top. Their number can be varied, but it’s better to serve a separate plate with polished grains of this wonderful fruit.
