Khorasan wheat in marinara sauce

Khorasan wheat, or kamut, differs from ordinary wheat more oblong golden grain. It is cooked for a long time, but with this acquires a pleasant elastic texture and a warm nutty taste and the aroma. Ingredients for the recipe:

  • 1 tbsp. durum Khorasan (durum), or kamut, sort through
  • 1 tbsp. l olive oil
  • 2 garlic cloves, finely chopped
  • A small pinch of red pepper flakes
  • 1 tbsp. l tomato paste
  • 1 can 425 gr. Canned Tomatoes Cream in Your Own hands rubbed juice
  • A small handful of fresh basil leaves + optional for filing
  • 2 tbsp. l grated parmesan

Recipe preparation:

  1. Fill a medium-sized saucepan two-thirds with water and bring to a boil. Add the wheat and cook until the grains become soft, but still elastic, 55 minutes – 1 hour. Then drain the water.
  2. Meanwhile, pour olive oil in a medium-sized pan. oil, add garlic, 0.5 tsp. salt and red pepper flakes and put on medium heat. As soon as the oil starts to flicker, stir until garlic is golden, about 30 seconds. Add tomato paste and mix so that the oil turns yellow, about 30 seconds. Add mashed tomatoes and their juices, 0.5 tbsp. water and basil. Bring to a boil, reduce heat to moderate weak and boil at a slow boil until the sauce thickens, 10-12 minutes.
  3. Stir in the Khorasan wheat and transfer to a serving dish. Sprinkle with parmesan and basil and serve hot.
