  1. Rinse lamb with cold water, dry. Clear meat from films and cut into small pieces. Kharcho with Mash Bean
  2. In a saucepan with a thick bottom, heat the oil, fry the lamb until evaporation of meat juice and the formation of a small golden crusts.
  3. Cut the onion into a medium dice, grate the carrots on a large grater. Cut eggplant into small cubes. Put the vegetables in the meat. Fry for about a quarter of an hour until soft, without stopping mix meat and vegetables for even frying.
  4. Peel the tomatoes and knead with a fork until mashed. Put in a pan.
  5. Add salt, pepper, cumin, coriander and saffron. To mix everything and simmer for about 5 minutes.
  6. Peel the potatoes and cut into medium cubes.

  9. Allow to boil, reduce heat. Cook for about an hour on slow the fire.
  10. Pour pomegranate juice into kharcho 7-10 minutes before the end of cooking put chopped herbs and grated garlic.
  11. Serve with pita bread.
