- Rinse lamb with cold water, dry. Clear meat from films and cut into small pieces.
- In a saucepan with a thick bottom, heat the oil, fry the lamb until evaporation of meat juice and the formation of a small golden crusts.
- Cut the onion into a medium dice, grate the carrots on a large grater. Cut eggplant into small cubes. Put the vegetables in the meat. Fry for about a quarter of an hour until soft, without stopping mix meat and vegetables for even frying.
