- We wash the eggplant and cut into 5 mm circles.
- Salt well and put in a bowl.
- Peel the garlic and onion, finely chop. Grind the pepper by removing the core. Preheat 1 tbsp. a spoonful of oil and for 6 minutes fry the onion. Add pepper, sun-dried tomatoes, sugar, tomato paste, vinegar, black pepper and cook for another 5 minutes.
- Dry the eggplant and spread on a baking sheet. For each we distribute the eggplant tomato mixture and pour over the remaining oil. Cover with foil and bake for 45 minutes at 180 degrees.
- Before serving, you can sprinkle with sesame seeds. Have a nice appetite!
