- 24 large eggs
- 1 can (113 gr.) Canned chopped pimento peppers, drain the liquid
- 1 tbsp. grated hot cheddar (about 100 gr.)
- 220 gr cream cheese, room temperature
- 3/4 Art. mayonnaise
- Hot sauce, as needed
- 1 tbsp. fresh parsley leaves
- 0.5 tsp finely grated lemon zest
- 4 chives, finely chopped (about 0.5 tbsp.)
- Sweet or smoked paprika, for decoration

Recipe preparation:
- In a large saucepan over high heat, bring the water to a boil and prepare a large bowl of ice water. Gently lower the slotted spoon eggs in boiling water and cook for 12 minutes. Drain and immediately put eggs in ice water with a slotted spoon to cool them, for about 5 minutes.
- Peel the eggs and cut them in half along. Remove the yolks from 36 halves of protein and transfer them to a food processor. Add pimento peppers, cheddar, half cream cheese cream, 0.5 tbsp. mayonnaise, a pinch of salt and a couple of drops of hot sauce. Whisk until the mixture will not become homogeneous and light. Transfer stuffing with greens to another a large plastic bag with ziplock and put in the refrigerator, while laying egg whites.
- Lay in front of you a large wooden cutting board (minimum size 55×40 cm.), one of the short sides facing to you. Lay 1 egg white (pointed side up) on bottom of the board. Position 2 egg whites (pointy side down) immediately above the first protein so that all three the halves touched the tips, and between the eggs small space. Keep laying the eggs in such a way to form 8 rows, moving up and alternating halves, directed up and down, and adding 1 egg to each row (total 36 protein halves). You should get carrots.
- Arrange the remaining 12 egg white halves in 3 separate row in the upper part of carrots (4 halves per row). They have to slightly apart and resemble carrot tops.
- Cut a 1 cm wide hole in one corner of the bag from cheese and pepper. Fill 36 holes of the proteins that make up carrots, then squeeze the remaining filling directly onto egg whites. A small pastry trowel neatly distribute the filling so that the eggs are almost completely covered.
- Cut a 1 cm wide hole in one corner of the bag with the filling from greens. Fill 12 holes of proteins that make up carrot tops, then squeeze the remaining filling on all the squirrels. Small with a pastry spatula, carefully distribute the filling so that almost completely cover the eggs.
