Healthy Cole Slow Cabbage Salad

Cole Slow – a traditional American cabbage salad in fermented milk dressing. It is made from juicy fresh cabbage, contains many vitamins and healthy dietary fiber and can garnished with almost any main course. Ingredients for the recipe:

  • Half a head of white cabbage (about 0.5 kg.), grated
  • Half a head of red cabbage (approximately 0.5 kg.), grated
  • Coarse salt + 1 tsp.
  • 1 carrot, grated (1 tbsp.)
  • 0.5 tsp celery seed
  • 0.5 tbsp. low fat mayonnaise
  • 2 tbsp. l mustard
  • 3 tbsp. l brown sugar
  • 3 tbsp. l pineapple juice
  • 0.5 tbsp. low yogurt or yogurt fat
  • 1/4 tsp cayenne pepper

Recipe preparation:

  1. Mix two kinds of cabbage in a large colander. Add plenty of salt and put in the sink for about 1 hour so that the excess glass liquid. Rinse the cabbage under cold water and dry thoroughly. Stir in the carrots in cabbage.
  2. In a dry frying pan over medium heat, fry the celery seeds; cool. In a large bowl, combine mayonnaise, mustard, brown sugar, pineapple juice, yogurt, celery seeds, 1 tsp. salt black pepper to taste and cayenne pepper. Add the cabbage mix. Serve immediately or refrigerate until readiness for serving.
