Recipe preparation:

  1. In a medium-sized pan over high heat, heat vegetable oil. Add corned beef and fry, stirring a wooden spoon until a little fat comes out and the meat is slightly not browned for about 3 minutes. Add onions, bell peppers and potatoes and fry, without interfering, to a crispy golden crust below, about 6 minutes. Keep frying while stirring the potatoes so that it roasted evenly for another 15 minutes.
  2. Meanwhile, in a non-stick pan over moderately melt butter over high heat. Fry Fried Eggs or fry the eggs on both sides. Salt and pepper.
  3. Put the slices of cheese on top of the potatoes, reduce the heat and cook until the cheese melts, about 1 minute. Serve potatoes, laying on top of each serving of fried egg.
