- Coarse salt and freshly ground pepper
- 1/3 Art. mayonnaise
- 1/2 tbsp. chopped fresh parsley and / or basil
- 1/2 tsp finely grated lemon zest, and 2 tsp. freshly squeezed lemon juice (from 1 lemon)
- 8 slices of provolone cheese
- 4 onion buns, cut each into two parts
- 4 slices of tomato (preferably bull heart variety)
- Lettuce

Recipe preparation:
- Place the minced turkey in a large bowl, add the sausage pepperoni, rosemary, half garlic and 1/2 tsp. salt and pepper mix until smooth. Form four of minced meat round cutlets 1.2 cm thick.
- Heat a cast-iron pan to a moderately high temperature. Put the patties in a pan and fry, without moving, for 5 minutes. Turn the patties to the other side and continue to fry 3 more min., until golden brown.
- Meanwhile, mix in a bowl mayonnaise, parsley, lemon zest, lemon juice, and the remaining garlic. Season with salt and pepper over to taste. Put 2 slices of cheese on the patties, cover the pan lid and continue cooking until the cheese melt, approximately 1 min. Put cutlets on dish.
- Fry the buns in the same pan, then spread with a mixture mayonnaise. Put lettuce on the lower halves of the buns, cutlets, slices of tomato, salt and pepper. Then cover up upper halves of buns.
