Hamburgers with Turkey and Pepperoni Sausage

Ingredients for the recipe:

  • 500 – 600 gr. minced turkey
  • 120 gr. pepperoni sausages, cut into small cubes (approximately 1 tbsp.)
  • 1 large sprig of rosemary or sage, separate leaves from branches and chop finely
  • 1 clove of garlic, grate finely
  • Coarse salt and freshly ground pepper
  • 1/3 Art. mayonnaise
  • 1/2 tbsp. chopped fresh parsley and / or basil
  • 1/2 tsp finely grated lemon zest, and 2 tsp. freshly squeezed lemon juice (from 1 lemon)
  • 8 slices of provolone cheese
  • 4 onion buns, cut each into two parts
  • 4 slices of tomato (preferably bull heart variety)
  • Lettuce

Recipe preparation:

  1. Place the minced turkey in a large bowl, add the sausage pepperoni, rosemary, half garlic and 1/2 tsp. salt and pepper mix until smooth. Form four of minced meat round cutlets 1.2 cm thick.
  2. Heat a cast-iron pan to a moderately high temperature. Put the patties in a pan and fry, without moving, for 5 minutes. Turn the patties to the other side and continue to fry 3 more min., until golden brown.
  3. Meanwhile, mix in a bowl mayonnaise, parsley, lemon zest, lemon juice, and the remaining garlic. Season with salt and pepper over to taste. Put 2 slices of cheese on the patties, cover the pan lid and continue cooking until the cheese melt, approximately 1 min. Put cutlets on dish.
  4. Fry the buns in the same pan, then spread with a mixture mayonnaise. Put lettuce on the lower halves of the buns, cutlets, slices of tomato, salt and pepper. Then cover up upper halves of buns.
