Grilled Summer Salad

A quick and satisfying salad with a summer taste and aroma that you can grill while roasting meat. The main salad ingredients – corn and juicy Belgian chicory. Ingredients for the recipe:

  • 4 ears of fresh corn
  • 2 heads of Belgian chicory
  • 2 tbsp. l olive oil
  • 1 (90 gr.) Bunch of cilantro, only leaves
  • Half a small red onion, finely chopped
  • 1/4 Art. crumbled feta
  • Half lime juice
  • 0.5 tsp ground zira
  • 1/4 tsp cayenne pepper, or to taste

Recipe preparation:

  1. Preheat the grill.
  2. Remove the husks from the corn and cut the heads of chicory along in half. Put corn and chicory on a baking sheet or chopper board, pour olive oil, salt and pepper to taste. Put the corn and chicory on the grill and fry until they lightly carbonized on all sides, about 3 minutes for chicory and 5 minutes for corn.
  3. Meanwhile, in a medium-sized bowl, mix everything else Ingredients.
  4. Remove the prepared corn and chicory from the grill. Chop chicory across slices 0.5 cm thick and put in a bowl. Cut off corn on the cob of corn. Add them to the bowl and mix. Taste and salt if necessary. Serve salad warm or room temperature.
