  • 1.5 tbsp. blueberries
  • 1 tbsp. blackberry
  • 1/4 Art. tomato sauce
  • 2 – 4 tbsp. l brown sugar
  • 1 tbsp. l balsamic vinegar
  • 1 tbsp. l soy sauce
  • 1 chipotle chili pepper in adobo sauce, coarsely chopped
  • 2 sprigs of thyme
  • 1 tbsp. l (15 gr.) Butter

Recipe preparation:

  1. Preheat the grill to a moderate high heat. Lubricate the wire rack with oil. Ready barbecue sauce: heat olive oil in a medium saucepan over medium heat. Add shallots, garlic, cumin and coriander. Sauté periodically stirring until onion softens, about 3 min. Add bourbon and cook until the liquid is about half full, about 1 min Add 1/2 tbsp. water, blueberries, blackberries, ketchup, 2 tbsp. l brown sugar, vinegar, soy sauce, chili, thyme sprigs, 1/2 tsp salt and 1/4 tsp pepper. Cook, stirring occasionally, until thickening, from 20 to 25 minutes Remove from heat and mix with oil. Season with salt and pepper; add the remaining 2 tbsp. l brown sugar if the sauce is too tart.
  2. Dry the steaks and season with salt and pepper. Fry the meat on grill for 5 to 6 minutes. on one side, for medium frying. Put on a plate and let stand 10 minutes. Pour juice from steak in barbecue sauce; dilute with water if necessary. Serve steak with barbecue berry sauce or chimichuri sauce.
