Grilled Shrimp Rice Noodle Salad

To make this stunning lightweight and vibrant Asian salad flavors boiled rice noodles mixed with grilled shrimp, shiitake mushrooms and asparagus. Start with cooking marinade for shrimp, mushrooms and asparagus, which also will serve as a salad dressing. Lime, fish sauce, brown sugar, spicy sauce and garlic give this marinade a unique Asian taste with which it will fill all the components of the salad.   • 400 gr. flat rice noodles
  • 0.5 tbsp. freshly squeezed lime juice
  • 1/3 Art. fish sauce
  • 0.5 tbsp. brown sugar
  • 2 garlic cloves, finely chopped
  • 1-2 tsp Asian chili sauce (e.g., siraca)
  • 450 gr large shrimp, peeled from shells and intestinal veins
  • 1 medium bunch asparagus, trimmed
  • 150 gr. shiitake mushrooms, trimmed
  • 1 medium carrot, grated
  • 0.5 tbsp. fresh cilantro

Recipe preparation:

  1. Pour water into a large pot and bring to a boil. Add noodles and cook as recommended on the package; drain water and rinse the noodles under cold water.
  2. Meanwhile, in a bowl, mix lime juice, fish sauce, brown sugar, garlic, chili sauce and 1/3 tbsp. water. Overflow 1/4 Art. marinade in another bowl and mix with shrimp. Mix more 1/4 Art. marinade with asparagus and mushrooms in a third bowl. Leave shrimp and vegetables marinate for 10 minutes at room temperature. Mix the noodles with the remaining marinade.
  3. Heat the grill or grill pan to moderate heat. Fry the prawns, asparagus and mushrooms until the prawns turn pink, and asparagus is a little soft, 2-3 minutes on each side. Cut the mushrooms in half, and cut the asparagus into pieces.
  4. Arrange the noodles in plates and garnish with shrimp on top, asparagus, mushrooms, carrots and cilantro.
