Muhammara Sauce

  • Zest and juice 1/2 lemon

Recipe preparation:

  1. Muhammara Sauce: Put all the ingredients except lemon zest into a food processor and beat until a smooth paste is obtained. (Start with 1 hot pepper, try and then add another pepper, if you want to be spicy.) If the mixture is too much thick, pour more olive oil. Add the lemon zest and mix by hand. Try and add more salt and hot pepper.
  2. Create an indirect heat zone on the grill and heat it to moderate heat. In a large bowl, mix the parsley, yogurt, garlic, coriander, salt, cumin, paprika and allspice.
