  • 550 – 600 gr. pork tenderloin
  • 3 tbsp. l olive oil
  • 1 small clove of garlic, grate finely
  • Coarse salt and freshly ground pepper
  • 2 medium-sized zucchini, cut into longitudinal slices
  • 1 large tomato, diced
  • 1 tbsp. l fresh lemon juice
  • 1/4 Art. chopped fresh parsley

Recipe preparation:

  1. Preheat grill to medium temperature. Make couscous according to the instructions on the package. Mix yogurt, harissa sauce and 1 Art. l water, salt the sauce to taste.
  2. Put the pork tenderloin on a cutting board and make longitudinal incision, not cutting to the end of 12 mm., then reveal as a book. Cover with plastic wrap and beat off with a kitchen hammer or a heavy frying pan to a thickness of 1 cm. Remove the film. Mix in bowl 1 tbsp. l olive oil, garlic, 1/2 tsp salt and pepper to taste. Then grate pork on all sides.
  3. Stir zucchini with 1/2 tbsp. l olive oil, 1/4 tsp salt and pepper to taste. Grill zucchini for 3 minutes. with each side. Place on a cutting board and cut into slices.
  4. Grill pork for 3 minutes. on each side to readiness. Transfer to a cutting board and leave on 5 min
  5. Stir couscous with zucchini, tomatoes, lemon juice, parsley and remaining olive oil, salt and pepper over to taste. Cut pork into 4 parts and serve with sauce and couscous.
