Grilled lamb skewers in style tandoori

Photo of grilled lamb skewers in the tandoori style Time: one час.35 minutes Difficulty: easy Servings: 4 – 6 Recipes used volumetric containers: 1 cup (tbsp.) – 240 ml. 3/4 cup (st.) – 180 ml. 1/2 cup (tbsp.) – 120 ml. 1/3 cup (st.) – 80 ml. 1/4 cup (st.) – 60 ml. 1 tablespoon (tbsp.) – 15 ml. 1teaspoon (tsp) – 5 ml.

Ingredients for the recipe:

  • 1 tsp ground cumin
  • 1 tsp spice mixes Garam Masala
  • Seeds of 3 cardamom fruits (1/2 tsp. Ground in a mortar pestle)
  • 1 tsp onion powder
  • 3 tbsp. l canned minced garlic or 8 chopped cloves
  • 1 tbsp. natural yogurt
  • 2 tbsp. l sweet paprika
  • 2 tsp crushed black pepper
  • 1/2 tbsp. chopped cilantro leaves plus more leaves for decoration
  • 2 tsp coarse salt or Hawaiian sea salt
  • 3 tbsp. l Indian curry powder (see recipe mix spice)
  • 450 gr peeled from veins and fat and diced 2.5 see boneless lamb leg meat
  • 4 wooden skewers (soak in water for 2 hours) or 4 metal skewers
  • 4 – 5 sliced 2.5 cm. Stalks of green onions
  • Basmati rice with cilantro (or Orzo pasta with green onions and butter) to serve
  • Lime wedges and a little raita sauce (yogurt sauce with vegetables) for serving

Recipe preparation:

  1. In a dry frying pan over low heat, heat cumin, spices Garam Masala and Cordamon before opening the aroma, about 1-2 minutes. Add onion powder and garlic, then transfer the mixture to a bowl. Add yogurt, paprika, curry powder, cilantro, salt and pepper.
  2. String 4 cubes of mutton for each skewer, alternating them with pieces of green onions and leaving about 1/3 of the skewer as pens. Lay them on a shallow glass mold and pour yoghurt mixture (turn if necessary to fully cover the meat with sauce). Leave to marinate in the refrigerator for at least hours or overnight.
  3. Lubricate the grill with an oiled paper towel and heat it. to moderately high temperature. Lay skewers at an angle to beautiful strips turned out and fry for 3-4 minutes. on each side to state of weak frying, 5-6 minutes. on each side to the state medium rare. Put the skewers on a serving platter, garnish with lime slices and cilantro. Serve kebab with basmati rice with cilantro or orzo with green onions and butter, optional adding raita (yogurt sauce with vegetables).
